Johanna, daughter of a Breton farmer, and Louis, son of an Ardèche winegrower, have been farming eight hectares in Sévignac since 2011, where apple and pear trees flourish on deep clay-silt soil.
The orchards are maintained without pesticides or insecticides in order to preserve the environment. The fruits are harvested by hand. After fermentation with indigenous yeasts in vats, the ciders are assembled in small oak barrels and then bottled a few months later for refermentation which allows natural carbonation.
Chef's tip: Ideal as an aperitif or to accompany oysters and seafood, cheese or on a Belle-Hélène pear. Serve at 8°.
